Murphy’s Red Hots, the 32-year-old hot dog stand that closed last August in Lakeview, returns to Schubas for Labor Day weekend! Stop in anytime from 11am to 4pm on Saturday, August 31st through Sunday, September 1st for some of the best damn hot dogs this city has ever seen. Half Acre will also be taking over our taps with old favorites and specialty drafts!

Daisy Cutter / Pale Ale / 5.2%
The Half Acre classic. A workhorse pale ale and go-to for our entire brewery
Tasting notes : Dank citrus flavor and aroma, edges of pine and biscuit

Bodem / IPA / 6.7%
Our most recent reimagining of year round IPA, firmly at the midpoint between West Coast classic + East Coast new.
Malt: House 2 Row, Pale, Flaked Oat, Wheat Malt, Carafoam
Kettle Hops: NONE
Whirlpool Hops: Idaho 7, Citra, Mosaic
Dry Hop: Cashmere, Idaho 7, Mosaic Cryo (total of 2 lbs/bbl)
Yeast: London 3
Appearance : Bright golden orange
Tasting Notes : Soft, welcoming mouthfeel with a sticky mix of citrus and tropical fruits

Volo / Midwestern Grist Wheat Beer / 4.8%
A true easy drinking lager, with apparent malt presence, lightly balanced with herbaceous hop quality.
Malt : Local Pilsner and Pale, Wheat, Caramel
Hot Side Hops : Saaz, Grungeist
Tasting Notes : Round wheat and lightly toasted white bread, subdued citrus fruit and bright floral undertones. Low sulfur, classic lager yeast character and medium heft in the body.

Logue / Double IPA / 8.2%
Logue was a chance to focus on two of 2019’s favorite hops in the brewery. There is a little bit of Amarillo in to add depth but the focus is all Cashmere and Sabro. A fluff malt bill stabilizes these two behemoth hop currents. Both explode in singular flavor waves, easy to pick out for what they are. In Logue, these two varietals have been grafted onto one another in so many ways you can’t tell where one ends and the other begins. Greater than their individual sums, this 8.2% blended Tropics concoction breeds true synergy.

Tasting Notes : Painkiller Tiki Drinks sans Nutmeg, Pineapple, Coconut. Peach fuzz chew. Melting starburst viscosity. Severe Islandvibe

Shallow Back / Mixed Culture Berliner Weisse / 3.9%
Brewed with under modified barley and wheat and fermented in neutral oak with our house ale yeast and lactobacillus planatarum before being bottle conditioned for three months. Light in color with lemon zest and sage building up to ripe stone fruit, water cracker and white pepper, it has direct but quickly dissipating acid and an overall relaxed presence.

Smoking Gull / Triple Dry Hopped Pale Ale / 5.3%
This is a glowing pale ale hopped with Citra and Mosaic and brewed with some of our newer techniques for hoppy brews. We do add a bittering hop addition to the kettle so as to keep some balanced bitterness in the beer for crushability. Dry-hopped three times throughout fermentation, the total dry hop rate is 3 times that of Daisy Cutter or Tuna. We ferment with an ester-forward English strain to help emphasize fruitiness. We brew it with flaked oats to help fluff up the mouthfeel just a touch. The beer drinks really hoppy, but not saturated. The hop character is not overblown, but does pour out of the glass as over-ripe citrus and pungent tropical fruit. Really refreshing and drinkable, with some balanced bitterness, but not as bone dry or crisp as Daisy Cutter and Tuna.

Dry Hop 1 (with yeast pitch): Citra, Mosaic
Dry Hop 2 (early fermentation): Citra, Mosaic

Tasting Notes : Overripe citrus, pungent tropical fruit
